Eggless Chocolate Cake



Today, I made little mini cakes for the fun of it. I don't have that much butter left, so decided to make a butterless cake. You know, normal healthy people don't normally eat butterless cake for no apparent reason; unless they're lactose intolerant. But decided to give it a try anyway. Was in the mood for chocolate cakes. And since I was so lazy to walk over to the grocery store, I decided to use THIS recipe, since a lot of people have actually tried it and all gave positive reviews. The photo for me was already a pulling factor. It looked so chocolaty. Yum!

Instead of making a big cake for 5, I made little mini cakes instead. I made 22 mini cakes in all. The first batch I made, I baked it for around 10 minutes at 175 degrees Celsius. And after 10 minutes, the cakes turned out soft and chewy. The next batch, I left it a little bit longer in the oven. The edges were crunchy, but the middle was soft. I prefer the first one better. But the second batch was just as nice. The taste was pretty much bland. But I reckon it will taste better with powdered sugar or ice cream - as suggested by the people in the forum.

As seen from the photos, the cakes actually looks like those kuih apam kukus my grandmother used to make. Also, I added a 1/2 a teaspoon of baking powder. Which was why the cake had that retarded bulge on the top.

Ingredients (Makes about 22 mini cakes)

115g All Purpose Flour (sifted)
125g White Sugar
20g Cocoa Powder
3 tablespoons of veg oil (or you can use melted butter)
About 1/2 cup of water
1/2 teaspoon baking soda
1/2 teaspoon baking powder (optional)
1/8 teaspoon salt
1 teaspoon vanilla extract

Direction
  1. Preheat oven to 175 degrees Celsius. Grease baking pan.
  2. Mix flour, cocoa powder, baking soda, salt, sugar.
  3. Add oil, water, vanilla. Mix.
  4. Pour in baking pan. Baking times: Mini cakes: around 10 minutes. Large Cake: 45 minutes (as suggested in the website).
Anyway, this cake is a great substitute for those who's on a diet. The calorie count is actually much lesser compared to those that contained eggs and butter.
